Timber Ridge Names New Food and Beverage Director and Executive Chef

ISSAQUAH, WA–Timber Ridge at Talus, a Life Plan Community featuring resort-like amenities located at the base of Cougar Mountain in Issaquah, has named Marcus J. Kollmai Food and Beverage Director and Stacie Demaline Executive Chef.

European-trained Kollmai, a 27-year veteran of the food and beverage industry, most recently served as Senior Director of Food Services at Morrison Senior Living, running the food and beverage operations at senior communities located in California, Colorado, New Mexico and Washington. Prior to that, he owned and managed the Swiss Park Banquet Center in Whittier, Calif.

Kollmai is a graduate of the Hotel & Restaurant Management School of Innsbruck, Austria. He earned a Dietary Manager’s Certificate from the University of North Dakota and a ServSafe Certificate from the National Restaurant Association.

He will be responsible for the daily operations and dietary services of the multiple dining venues at Timber Ridge, which focuses on the overall well-being of its residents including nutrition.

Demaline previously served as Executive Chef for Spectra Food & Hospitality in Auburn, Wash. She earned a Bachelor of Arts degree from Le Cordon Bleu College of Culinary Arts in Seattle.

Her responsibilities will include managing the culinary staff and overseeing menu development including private dining for social events at Timber Ridge.

Amenities of the mountainside Timber Ridge community include an aquatic and fitness center, 190-seat state-of-the-art activity auditorium, creative arts studio, putting green, bocce ball, library, woodworking shop, salon and restaurant-style dining — all exclusive to its residents.

Timber Ridge, a 331-residence Life Plan Community, is the first national retirement community to be awarded Silver LEED (Leadership in Energy and Environmental Design) by the U.S. Green Building Council.
